These garlic roasted potatoes are herby, creamy, crispy, and the perfect side dish for any occasion.
Roasted potatoes are one of my favorite dishes to make. Especially, when I want to impress my guest. They’re easy to make, healthy, and go well with just about anything. Some of my favorite recipes to add these potatoes with include: lentil patties, veggie burgers, black-eyed peas, green beans, and eggplant & cauliflower sandwiches.
Should you soak potatoes in water before roasting
This step is optional. However, you can soak your washed and cut potatoes in cold water to remove excess dirt and potato starch. In addition, this step will prevent the potatoes from browning too fast when cooking and helps them crisp up even more when baking.
Why are my roasted potatoes not crispy?
If you soaked your potatoes in water, then you’ll want to pat them dry with a dishcloth or paper towel to remove any excess water. Also, the hotter your oven the crispier the outside of your potatoes will get. All you have to do is pre-heat your oven and add the potatoes once it’s ready.
How to make this garlic roasted potatoes recipe
- Preheat your oven to 400 degrees Fahrenheit. Cut your potatoes in half or quarters (if they’re big) and place them in a mixing bowl with avocado oil, minced garlic, parsley, sea salt, and pepper. Mix until well coated.
- Transfer the herby potatoes to a parchment-lined sheet pan and spread them out on one even layer. Roast the potatoes for 45-55 minutes, stirring halfway through, until browned and golden.
- Once cooled, transfer the potatoes to a serving platter. If you’d like, sprinkle a little extra parsley & lemon juice on top before serving.

- Herbs – fresh or dried herbs add so much flavor to these potatoes. Use your favorite herbs. I used parsley for this recipe.
- Citrus – there is nothing better than lemony potatoes. I love adding lemon, lime, or orange zest to potatoes. It adds a nice floral & bright flavor.
- Cheese – that umami flavor from the cheese adds texture and more creaminess to the potatoes.

Ingredients
- 3 pounds small potatoes of your choice
- 3 tbsp avocado oil or grapeseed oil
- 6-7 garlic cloves minced
- 2 tbsp fresh parsley or other herbs
- 1 tsp salt
- 1/2 tsp black pepper
