Tips for making vegan banana bread

  • Why ripe bananas are best – very ripe bananas should have spots on them. They’re sweeter and add so much flavor to the bread.
  • Use fresh baking soda – fresh baking soda (less than 3 months old) will help the banana bread rise well.
  • Do not overmix – It’s okay to have lumps. Mix the batter until just combined for a fluffy batter.

How to store vegan banana bread

You can easily store banana bread in the fridge or freeze it. Just let it cool completely and store as a loaf or cut into slices.

  • store in the fridge – store in an airtight container and eat within 5-6 days.
  • store in the freezer – store in an airtight container for up to 6 months.
  • thawing – let the bread sit at room temperature for a few hours in the microwave for 30 seconds.
