OMG! I can’t believe it’s taken me this long to make a waffle recipe on the blog. I love WAFFLES!! For years, when I went out for brunch with friends and family, I only ordered waffles. Yes, I’m obsessed. Now, I’ve expanded and I eat more pancakes. By the way, if you haven’t already, check out my 3-ingredient oatmeal pancakes.
Infusing fruit into breakfast recipes is a great way to update those classic recipes we all know and love. I drink lots of smoothies all the time and love to incorporate fruit into other recipes as well. Like my strawberry shortcake, chocolate raspberry chia pudding, and lime raspberry tart. What’s in these vegan waffles
- flour
- baking powder
- unsweetened applesauce
- oat milk – can sub for any milk of choice.
- maple syrup
- lemon juice or apple cider vinegar
- vanilla extract
- blackberries
How to make vegan waffles
- Add all the ingredients into a large mixing bowl (except for the blackberries or whatever fruit of choice). Mix until well incorporated. Do not over-mix. The batter should be thick.
- Next, fold in the blackberries. Spray the waffle iron with nonstick spray.
- Preheat the waffle iron and pour the mixture into the waffle iron and cook according to the waffle iron’s instructions. Repeat with the remaining batter.
- Top with vegan butter, hemp seeds, berries, & maple syrup.
