Green Beans have been a tradition in my family for as long as I can remember. My mom makes the best green beans I’ve ever tasted. Although, the green beans at the hot bar at Wholefoods are pretty good too. But don’t tell her I said that lol. But, seriously, my mom’s green bean recipe is so simple but includes potatoes and corn and it tastes like she put hours into it. She is always asked to bring her green beans at family gatherings.
Although, I aspire to make my green beans as good as my mom’s I wanted to make this recipe my own. Adding a sweet bell pepper takes and vegan cashew butter takes the flavor to another level. The great thing about green beans is that there is no one recipe. You can make them your own. I simply ask that you simply put a lot of love into your green bean recipe
What’s in this green bean recipe
- Fresh green beans
- Miyoko’s vegan butter
- Red onion
- Clove of garlic
- Red bell pepper
- Lemon juice
- Sea Salt
- Black pepper
How to make vegan green beans
- Melt the Miyokos butter in a skillet over medium-low heat, and cook and stir the red onion and garlic until translucent, about 5-6 minutes.
- Stir in the green beans, garlic, red bell pepper, and veggie broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender about 20 minutes. Sprinkle with sea salt, black pepper, and lemon juice.

Ingredients
- 1 small red bell pepper
- 1 lbs fresh green beans
- 3 tbsp vegan butter
- 1 small red onion
- 1 large clove of garlic minced
- 1/4 cup veggie broth add more if needed
- sea salt and pepper to taste
- 1 lemon juiced
Instructions
- Melt the Miyokos butter in a skillet over medium-low heat, and cook and stir the red onion and garlic until translucent, about 5-6 minutes.
- Stir in the green beans, garlic, red bell pepper, and veggie broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender about 20 minutes. Sprinkle with sea salt, black pepper, and lemon juice. Enjoy!!
