Easy Mango Salsa Recipe

This easy mango salsa recipe is my new favorite dip. It’s sweet, tangy, and spicy.

I love salsa, but I have to be honest I do not make them as often as I should. And, there is so much you can do with salsa. Like this, mango salsa. See more ways to use this salsa down below! One of the reasons I created this vegan recipe site was to challenge myself to create more whole-food plant-based recipes. 

How to tell if your mango is ripe

You can tell if a mango is ripe by, adding firm (not too firm) pressure to the fruit. If the fruit gives a little while being squeezed, it is ripe.

How to cut a mango

Peel the skin with a vegetable peeler or a knife. Once complete, cut a piece from the bottom to help the mango stand up. Next, cut very thin strips of the mango on each side without hitting the pit. If you hit the pit you know you went over too far. After that, cut around the pit to get as much mango as you can.

Ingredients for a mango salsa recipe

Here is the list of ingredients you need to pick up from the grocery store for this recipe. 

  • mangos – any ripe mango will do fine in this recipe. For this recipe, I used Champagne mangos. They’re sweet and have a juicy texture. 
  • lime juice – It makes this recipe tangy and floral. 
  • jalapeño – adds heat. Although, I did remove most of the seeds for less heat. 
  • red onion – great for crunch, color variety, and flavor. 
  • cilantro – I love it for the flavor and that beautiful green color adds more depth to the salsa. 
  • cucumber – this ingredient is optional but it’s very refreshing.
  • sea salt – brings out the flavor of all the ingredients. 

How to make this mango salsa 

  1. Prepare your ingredients for the recipe. Once complete, toss them into a bowl and stir everything together with a spoon until it’s combined. 
  2. Chill the salsa for at least 10 minutes to give all the flavors time to blend. Add to another recipe or serve with tortilla chips. Enjoy! 

Mango Salsa Serving Variations

I ate this salsa in 1.5 days. It’s that good. However, there are lots of ways to enjoy the salsa and I’ve listed some ideas below to give you inspiration. 

  • Bowls and wraps – Start with a base of cilantro cauliflower rice and black beans, pinto beans, or black-eyed peas. Next, add your favorite veggies, guacamole, and mango salsa. Or, add a scoop of salsa to my chickpea lettuce wraps. 
  • On tacos – Add to my Asada mushroom tacos, jackfruit tacos, or Brussel Sprout tacos. 
  • Over salads – any of these 23 vegan salad recipes. 
  • On top of burgers – It would be delicious on this tempeh torta, chickpea burger, or lentil patties. 

Recipe Tips

  • Use mangos that are ripe for this recipe. 
    • This will add more flavor.
  • If you don’t like your salsa too spicy, simply remove the seeds or add half of the jalapeño pepper. 
  • If you do not like cilantro, use some fresh parsley instead. 
  • This recipe tastes great with chopped-up avocado, red bell peppers, or cherry tomatoes. 
  • If you’re not vegan then I would highly recommend adding this recipe to fish tacos, steak tacos, or any burrito of your choice.

Ingredients
  

  • 2 ripe mangos peeled, pitted, and diced
  • 1 medium cucumber sliced and diced
  • 1 jalapeno seeded and finely diced
  • 1/2 small red onion diced
  • 1 lime juiced
  • 1/4 tsp sea salt
  • 1 handful cilantro chopped, add more if preffered
