Buttermilk: Add 1.5 tsp vinegar (or lemon juice) to your non-dairy milk and stir well. Let it sit to curdle for approximately 5 minutes.
Baking Powder or Baking soda: Both are leavens. They create the bubbles you see in pancake batter. They both work to make pancakes fluff, light, and brown. However, most of the rise comes from baking powder.
Let the batter rest: Once the batter is ready, I always let it rest for about 5 minutes. This will help the baking powder/baking soda to get activated.

- Add your oats to a blender or food processor and blend (or pulse) until your oatmeal forms a coarse flour.
- Next, add your oat flour to a small bowl along with cinnamon and non-dairy milk. Combine the mixture until it forms a batter.
- Preheat a large pan over medium-high heat. If your pan isn’t non-stick, add a small bit of oil, and when hot, spoon about 1/4 cup of batter onto the pan and let it cook. Flip when the top of the oat flour pancakes is bubbly or the edge of the pancakes turns golden brown for about 2-3 minutes. Cook the other side for another 2-3 minutes.
- Top with maple syrup, fruit, or desired toppings, and enjoy!

Freezer: Place pancakes spread out on a baking sheet lined with parchment paper and freeze until frozen (this will prevent them from sticking together). Then transfer the pancakes to an airtight container or freezer bag and freeze for up to 3 months. To reheat place them in a toaster, toaster oven, or microwave until warmed through.
