I’m sure I don’t have to tell you that cauliflower has been highly talked about over the past few years. I feel like it’s the new kale, right? For good reason too. It is low in carbs and is an amazing grain-free rice alternative. Cauliflower is so versatile. This cilantro cauliflower rice recipe is a great way to add more veggies and eat fewer grains. Cauliflower can be used for several substitutes such as tater tots, pizza crust, taco filling, mashed potatoes, and rice (obviously). Oh, you can also use cauliflower as a cheese substitute. So all my dairy intolerant and vegan friends can expect to see more recipes using cauliflower as a substitute.
Not to mention, cauliflower is a great source of vitamin C and has anti-inflammatory benefits. More benefits of cauliflower include immunity boost, reducing the risk of heart disease, and cancer. Let me tell ya, If you’re not eating this awesome vegetable on the regular then you’re missing out, my friend.
Now back to Cauliflower Rice. You can buy “riced” cauliflower at most grocery stores. However, I prefer to make it at home if you have a food processor. It’s much fresher and that way you have control over the amount of salt, pepper, etc. being added to the cauliflower rice. If you have a food processor at home then it will take less than 1 minute to make. I decided to jazz up the cauliflower rice by adding the cilantro. However, feel free to stick with the basic cauliflower rice by omitting the cilantro and following the instructions below.
HOW TO MAKE CILANTRO CAULIFLOWER RICE
Follow these easy steps below to make and enjoy homemade cilantro cauliflower rice in less than 10 minutes.
- Use a knife or your hands to remove the cauliflower florets from the head of cauliflower.
- Put the cauliflower in your food processor and pulse until the cauliflower is “riced.” Note: if you
dont have a food processor then ahand held grater will work just fine. - Add the cauliflower + finely chopped cilantro to a pan and sauté for 5-7 minutes.
- Season with black pepper, sea salt, and lime (optional) and serve.
Cilantro Cauliflower Rice
Ingredients
- 1 head of cauliflower washed
- 1 handful of cilantro
- 2 tbsp of olive oil omit oil if you’re oil-free
- salt and pepper to taste
Instructions
- Use a knife or your hands to remove the cauliflower florets from the head of cauliflower.
- Put the cauliflower in your food processor and pulse until the cauliflower is “riced.”
- Add the cauliflower + finely chopped cilantro to a pan and sauté for 5-7 minutes.
- Season with black pepper, sea salt, and serve.
