Pumpkin spice energy bites are an easy no-bake snack that will give you a boost of energy in-between meals. Enjoy this fall-inspired with a pumpkin-spiced latte, coffee, or tea.
I love meal-prepping healthy snacks to eat throughout the week. Especially snacks that do not involve cooking. Yep, I can be a lazy cook too. I usually meal prep on Sundays. My homemade energy bites usually take me less than 20 minutes to prepare and I like to add them to ziplock bags for easy grab-and-go during the week.
How to Make Pumpkin Spice Energy Bites
- Combine all of the ingredients in the food processor.
- Pulse for about 1 to 2 minutes or until the mixture breaks down. The mixture should stick together, but still, be crumbly.
- Keep processing until the oils start to release a bit and the mixture sticks together pretty easily – be careful not to over-process or you’ll have nut butter mixture.
- Roll into balls and dip into chopped pecans or hemp seeds to coat.
- Store them in an airtight container in the fridge.
The pumpkin spice energy bites recipe is very customizable. I went with peanut butter but use any nut butter of your choice. Almond butter, cashew, or pecan butter would be great too. Also, feel free to add your favorite dried fruit, nuts, and seeds.

Ingredients

- 1/3 cup peanut butter (or any nut butter of choice)
- 2 tbsp chia seeds
- 2 tbsp flax meal
- 2 tbsp hemp seeds
- 3 dates, optional (replace with 2 tablespoons maple syrup)
- 2 1/2 tbsp pumpkin pie spice
- 1 tsp vanilla extract
- 1/4 tsp sea salt
