Roasted Sweet Potato Farro Salad

This roasted sweet potato farro salad is an easy recipe to you can enjoy all year long. It’s packed with flavor and compliments anything you add to it.

What is farro

Farro is a type of grain that’s packed with nutrients and is sold dry. Based on my research seems to have originated in Africa. You can enjoy farro in nourishing bowls, as a side dish, soup, and salads. Which is what this blog post is all about, right? Moreover, farro is low in calories but high in protein and fiber. 

Ingredients for this easy vegan salad

  • Farro: this nutty grain tastes delicious with many so many herbs and spices.
  • Sweet potatoes: adds sweetness, filling, plus they’re healthy too. 
  • Mixed greens: I love using a mix of spinach and arugula. 
  • Apples: lends a burst of flavor. 
  • Walnuts: taste delicious in salads and adds a nice crunch. 
  • Herbs & spices: No salad would be complete without these. I love adding smoked paprika, sea salt, black pepper, dried oregano, and sometimes cilantro. Use what you have at home here!
  • Salad dressing: I made a citrus-date vinaigrette. Feel free to use your favorite dressing.  

How to make this farro salad recipe

Get creative and make this salad your own. I intentionally left this salad simple in hopes that you will add more ingredients based on what you have at home and what’s in season. Add more fruit, if you like. Or, use a creamy salad dressing instead. I’ve eaten this salad with vegan caesar dressing, and it tastes so good together. 

  • Cook your farro according to the package directions. Or click here to learn how to cook farro. 
  • Prepare the salad dressing while the farro is cooking. Mix all the ingredients together in a food processor or blender and pulse/blend until combined well. Add water, if needed. Leave in the fridge until you’re ready to serve.
  • Create the salad: Combine all farro, mixed greens, sliced apples, roasted sweet potatoes, dried/fresh herbs, smoked paprika, sea salt, and black pepper in a serving bowl. Drizzle with the dressing and toss everything together. Taste and season as needed. Enjoy!!

Ingredients
  

Sweet Potato Farro Salad

  • 2 sweet potatoes cubed
  • 1 cup farro cooked
  • 1 cup mixed greens
  • 1 apple sliced
  • 1/4 cup walnuts or as much as you want
  • herbs & spices I used a mixture of smoked paprika, sea salt, black pepper, dried oregano

Citrus-Date Vinaigrette

  • 3 tbsp extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp fresh orange juice
  • 2 medjool dates (pitted) if the dates are not soft; soak in warm water for 5-10 minutes
  • 1.5 tsp dijon mustard 
  • 1/5 tsp ground cumin
  • 1/2 tsp smoked paprika 
  • sea salt to taste
  • black pepper to taste 
  • water as needed

Instructions

Citrus-Date Vinaigrette

  • Mix all ingredients in food processor or blender and pulse until combined well. Add water if the dressing is thick.
