Easy Mushroom Pasta with Herbs & Garlic
This easy mushroom pasta with herbs & garlic recipe is a simple and healthy-ish dinner perfect for any night of the week. Vegan and oil-free.
- 8 oz pasta of choice
- 16 oz mushrooms de-stemmed and sliced
- 3 tbsp dried thyme
- 2 garlic cloves minced
- salt and pepper to taste
- 2 tbsp nutritional yeast add more if you desire
- 2 tbsp dried basil
- half fresh lemon
Bring a large pot of water to a boil and cook pasta according to the package instructions.
In a large pan, add the mushrooms, garlic and few pinches of salt and pepper. Stir occasionally and cook until mushrooms are soft. About 5 to 7 minutes.
Stir in the cooked pasta along with the dried basil, thyme and the juice of half a lemon. Serve immediately with nutritional yeast on top.
