Marinated vegan asada mushroom tacos with pineapple salsa, avocado, jalapenos, and cilantro

Portobello mushrooms are a fantastic meat substitute. They have a meaty texture and absorb flavors well, making them an excellent ingredient for vegetarian or vegan dishes. Plus, they’re low in calories and high in nutrients such as potassium, copper, and selenium. I make mushroom tacos weekly at home. I love them.

Portobello Mushroom Taco Ingredients

  • Portobello mushrooms: These mushrooms are a larger, mature version of cremini mushrooms, and have a meaty texture and a rich, earthy flavor.
  • Avocado oil: A type of oil made from avocados that has a high smoke point and is often used for cooking at high temperatures. It is also a good source of healthy fats and antioxidants.
  • Orange juice: A sweet and tangy citrus juice that adds a bright, acidic flavor to dishes.
  • Cloves garlic: A pungent and flavorful herb that is often used in cooking for its distinct taste and aroma.
  • Cayenne pepper: A spicy chili pepper that adds heat and depth of flavor to dishes.
  • Smoked paprika: Add a smoky, slightly sweet flavor to dishes.
  • Chili powder: A blend of ground chili peppers, cumin, garlic, and other spices that are often used to season meat and bean dishes.
  • Limes: Adds a tart, acidic flavor to dishes.
  • Fresh cilantro: A fragrant herb with a bright, citrusy flavor that is often used in Mexican and Asian dishes.

Avocado Mash

  • Avocados: A creamy, nutrient-dense fruit that is often used in Mexican dishes.
  • Lime juice and zest: Lime juice adds a tangy, acidic flavor to dishes, while lime zest adds a bright, fragrant flavor. Together, they add a burst of citrus flavor to the avocado mash.
  • Sea salt & black pepper: Two common seasonings used to enhance the flavor of dishes.

Pineapple Salsa

  • Pineapple: A tropical fruit that adds sweetness and acidity to dishes.
  • Jalapeño: A medium-sized chili pepper that is often used in Mexican cuisine. It adds heat and a slightly sweet flavor to dishes.
  • Lime juice & Cilantro: Adds a tangy flavor and cilantro brings a citrus flavor.

How to make portobello mushroom tacos

  • First, clean the mushrooms and remove the stems. Hold the mushroom in one hand and slide the gills out with the tip of a spoon with the other hand. Continue this process until the gills are gone. Do the best you can to clean the mushrooms but mushrooms don’t have to be completely clean.
  • Then, in a mixing bowl, whisk together the oil, orange juice, garlic, cayenne pepper, smoked paprika, chili powder, lime juice, and cilantro. Marinate the mushrooms in the mixture for at least 20-30 minutes, making sure to coat them thoroughly.
  • While the mushrooms are marinating, prepare the avocado mash and pineapple salsa.
  • For the avocado mash, mash two avocados in a mixing bowl and add lime juice and zest, sea salt, and black pepper to taste.
  • For the pineapple salsa, chop up half a small pineapple and one jalapeño (seeded), and mix them in a bowl with lime juice and chopped cilantro.
  • Once the mushrooms are marinated, heat a skillet over medium-high heat, add the remaining tbsp of oil, and cook the mushrooms for about 5 minutes on each side, or until tender and browned.
  • To assemble the tacos, warm up your tortillas, and spread the avocado mash on each one. Then, add the cooked portobello mushrooms and top them with the pineapple salsa. Garnish with extra cilantro and lime wedges.

Mushroom Taco Variations

These variations are just a few ideas to get you started. Feel free to mix and match ingredients and flavors to create your own unique portobello mushroom taco creations!

  1. Mushroom Variations: Instead of cooking your mushrooms in a skillet, try grilling them for a smoky flavor. Make fajita-style tacos. Add sliced bell peppers and onions to your skillet along with your mushrooms. Or, make crispy mushroom tacos by coating your marinated mushrooms in a mixture of flour, cornmeal, and spices before frying them for a crispy, crunchy texture.
  2. Toppings: Top with vegan sour cream, vegan cheese, pico de gallo, guacamole, cashew cream, or chopped tomatoes.
  3. Beans: Add some protein & fiber by including black beans, chickpeas, or pinto beans.
  4. Korean-Inspired Mushroom Tacos: Marinate your mushrooms in a mixture of soy sauce, sesame oil, honey, and gochujang (Korean chili paste) for a sweet and spicy flavor.
  5. Use Veggies: Top with cabbage, lettuce, and pickled vegetables, like carrots and radishes, for added crunch.
  6. Breakfast Mushroom Tacos: Swap out the traditional taco toppings with scrambled tofu, vegan cheese, and diced avocado for a breakfast-inspired twist.

Serving Suggestions

These side dishes are easy to prepare and go well with the flavors of these vegan mushroom tacos. You can choose one or several of these options depending on your preferences and the occasion.

  1. Spanish Rice and Cilantro-Lime Rice: Also known as Mexican rice, this dish is made with long-grain rice cooked with tomatoes, onion, garlic, and spices. Cilantro-lime rice is a bright & fresh side dish that goes well with this taco recipe.
  2. Refried Beans: A classic side dish for any Mexican-inspired meal. Cooked pinto beans mashed with garlic, onion, and spices for a creamy and flavorful dish.
  3. Guacamole and Chips: Freshly made with ripe avocados, lime juice, cilantro, and diced tomatoes served with crispy tortilla chips.
  4. Mexican Street Corn: Grilled corn on the cob with a creamy, spicy sauce made with mayonnaise, lime juice, chili powder, and cotija cheese.
  5. Salsa and Chips: A variety of fresh salsas, such as pico de gallo, salsa verde, or roasted tomato salsa, served with tortilla chips.
  6. Grilled Vegetables: Seasonal vegetables like bell peppers, zucchini, and onions grilled with olive oil, salt, and pepper for a healthy and colorful side dish.

Tips for making these mushroom tacos

  1. Clean your mushrooms thoroughly: Before marinating your mushrooms, be sure to clean them properly. Use a damp cloth or paper towel to wipe off any dirt or debris gently. You can also rinse them under running water, but be sure to pat them dry afterward.
  2. Marinate your mushrooms for at least 20-30 minutes: To ensure that your mushrooms are flavorful and tender, marinate them for at least 30 minutes before cooking. You can also marinate them overnight in the fridge for even more flavor.
  3. Use a hot skillet: For the best sear and texture, use a hot skillet to cook your mushrooms. Heat it over medium-high heat before adding the mushrooms.
  4. Don’t overcrowd the skillet: To prevent your mushrooms from steaming and becoming soggy, make sure not to overcrowd the skillet. Cook them in batches if needed.
  5. Warm up your tortillas: To make your tacos even more delicious, warm up your tortillas before assembling them. You can do this by heating them in a dry skillet, wrapping them in foil, and heating them in the oven.
  6. Customize your toppings: Feel free to customize your toppings to your liking! You can add diced tomatoes, sliced radishes, or even some hot sauce for an extra kick.

How to store & re-heat these vegan tacos

Store the cooked mushroom tacos and pineapple salsa separately in airtight containers for up to 5 days in the fridge. Make the avocado mash on the same day you plan to serve the tacos for optimal freshness. Re-heat the tacos in the pan over medium until warm. You can freeze the cooked mushroom tacos for up to 3 months.
